On Monday, it was cold and gloomy and I really felt like having chili. I love a one pot meal, especially on a Monday night after work. Not wanting to break my efforts at eating better, I searched for a recipe for turkey chili. Uninspired, I decided to tweak my mom's classic chili recipe. The results? YUM! This was plenty for my boyfriend and I to enjoy for dinner and take to work for lunch the next day (my favorite kind of dinner!)
I wanted to add jalapenos, but the grocery store I stopped at after work was out of them, so I got poblanos instead. Not exactly the same flavor, but you could add any peppers you like.
Ingredients
1.25 lbs (1 package) ground turkey
2 large onions, diced
2 green bell peppers, diced
2 poblano peppers, diced
4 stalks of celery, diced
3 cloves of garlic, finely chopped
Half of a 28 oz. box (approximately 15 oz) of chopped tomatoes (I use Pomi)
2 15 oz. cans of dark red kidney beans
1 15 oz. can of corn
1/4 cup chili powder
2 tablespoons paprika
1 teaspoon coriander
Canola oil
Salt
Pepper
Heat canola oil over medium heat in a large pot, then add onions, celery, peppers, and garlic. Saute until the veggies soft, at least 5 minutes.
Add the turkey, and saute until cooked through.
Add the chili powder, paprika, and coriander. Stir and saute until fragrant, 2-3 minutes.
Add tomatoes, cover, and simmer for at least 30 minutes.
Add beans and corn, cover and simmer for 15 more minutes.
Salt and pepper to taste. Don't forget this step, I added a fair amount of salt, maybe 2 teaspoons. Then you're done!
Since this is my first food-related post, my pictures aren't very creative and I forgot to take a pretty picture of the finished product in my plain white bowl, or even any once I added the beans and corn...but I will next time!
